Section 5 — The "so what"

Everyone who owns the restaurant's operating system now wants to own its demand. Toast, Square, SpotOn and Olo are all building or partnering their way into ordering networks on top of the POS stack — commission-free at launch, with the operator's guest data pooled into the vendor's network. DoorDash's response is to buy demand outright: $125M into Wonder, $300M for Grubhub's campus business (Sep 15 2026). Meanwhile the AI layer is arriving everywhere at once — in the POS (PAR, Toast), in the back office, and now in the booking flow, where Resy is banning agents that order faster than humans (Sep 8 2026).

Act on it this week: if you sell to restaurants, audit which of these networks your customers are enrolled in and where your integration work needs to be — the API surface is being decided now, and network effects compound early. If you run restaurants, read the enrollment terms before joining a second network: today's "no commissions" is a launch-phase pattern, and guest-data pooling is the currency being exchanged. INFERENCE: expect paid placement or fee tiers once liquidity exists, on the maturation path DoorDash and Uber Eats followed — that is inference, not sourced fact.

Thin spots, stated plainly: Chowly surfaced nothing fresh this month. OpenTable and SevenRooms produced no material product news in the window — the one reservations story was Resy's bot crackdown. No padding.
